During the long Christmas school holiday which stretches from the end of November to the end of January food can be in short supply in the homes especially in the poor areas, where we provide food in the primary schools.
The school Christmas party dinner which is held anytime between December and the beginning of January is always anticipated with excitement. Those involved with food in each school meet together to plan the menu. Each school is allocated the same amount of money for each child.
Some schools stew their chicken, some buy it in already cooked and coated with breadcrumbs. Chicken is special and not available in many homes. The common factor is that they usually have two small tortillas, and a piece of fruit. They may have a fruit drink but it often comes in a bag and will be partially if not fully frozen. This provides a cold drink and lollipop all in one.
